PROCESS
Precision Processing, Character Preservation
Each lot undergoes careful sorting and immediate processing on the same day of harvest. Cherries are thoroughly washed and sorted before being processed using either washed or natural methods, chosen specifically to highlight the expression of each variety.
Our Processing Methods
Washed Processing
We produce washed coffees through wet milling, where the cherry is pulped to remove the husk and the beans are passed through an aqua washer to remove mucilage before drying.
Natural Processing
Our controlled drying process takes place over 15 days under protective shade, followed by careful ageing in our climate-controlled storage facilities.
This meticulous approach ensures that the unique qualities developed through months of growth in our mountain environment are preserved and enhanced, delivering coffee that truly reflects its origin.

OUR APPROACH
Sustainable Cultivation Among
Native Flora
Our cultivation practices are rooted in understanding and enhancing our natural environment, combining traditional wisdom with scientific precision. We maintain a diverse canopy of native shade trees that not only protect our coffee plants but also support the local flora and fauna while naturally enriching the soil through nitrogen fixation.
Our comprehensive soil management approach focuses on preserving the natural characteristics that make our location unique. We produce 100 tonnes of our own farmyard manure annually, created from a carefully balanced mixture of coffee husk, cow manure, sheep manure, and poultry manure. This organic mixture is enriched with phosphorus and potassium solubilising bacteria before application to enhance nutrient availability and soil health.
Complementing our organic foundation, we apply inorganic fertilisers on a need-based approach, providing critical elements specifically required for flowering and bean development. This targeted nutrition strategy ensures our beans develop enhanced density and more complex, flavourful profiles.
Through careful composting, strategic nutrition management, and sustainable water practices, we enhance the soil’s ability to impart distinctive flavours to our coffee. The estate’s biodiverse environment—home to various species of native flora and fauna—creates a natural balance that supports healthy plant growth while maintaining the ecological integrity of our mountain landscape.
Regular soil and plant analysis guides our decisions, ensuring that every intervention supports both the immediate quality of our coffee and the long-term health of our ecosystem.
